✨ Airfryer Tomato Soup & Chilli Honey Crusty Bread Recipe ✨



Ingredients (Serves 5-6):Soup:

  • 🍅 1000g tomatoes (200g per serving)

  • 🌿 Fresh basil (handful)

  • ☀️ 90g sundried tomatoes (15g per serving)

  • 🥣 1.25-1.5L chicken stock (250ml per serving)

  • 🧴 100-120g light Philadelphia cream cheese (20g per serving)


Crusty Bread (per serving):

  • 🥖 2 slices crusty bread

  • 🧀 30g cheese (15g per slice)

  • 🥓 2 slices chorizo

  • 🌶️ Chilli honey (drizzle, ~5g)



Method:

1️⃣ Prep the Soup in the Air Fryer:

  • Add tomatoes (whole or halved), sundried tomatoes, basil, and chicken stock directly into the air fryer basket or a heatproof dish that fits your air fryer.

  • Air fry at 200°C (400°F) for 20-25 minutes until the tomatoes are soft and slightly roasted.


2️⃣ Blend the Soup:

  • Add the light Philadelphia cream cheese directly into the mixture.

  • Use a hand blender or whisk to blend until smooth and creamy. Adjust seasoning with salt and pepper to taste.


3️⃣ Make the Chilli Honey Crusty Bread:

  • Lay the bread slices on a baking tray or in the air fryer basket. Top each slice with cheese and a chorizo slice.

  • Air fry at 180°C (350°F) for 5 minutes, or until the cheese is melted and bubbly.

  • Drizzle with chilli honey just before serving.


4️⃣ Serve & Enjoy:

  • Ladle the creamy tomato soup into bowls. Serve with your spicy, cheesy crusty bread on the side for dipping.
