INGREDIENTS
Mini Tortilla
2 Eggs
1/2 onion
Handful Kale
1/4 Pepper
Optional sauces (sriracha, light mayo)
METHOD

Chop all your veggies and place them into a pan with oil to quick fry.
Crack 2 eggs into a bowl and and whisk them together.
Place eggs on top of the veggies in the pan and leave for 2-3 minutes
Place a tortilla on top of the eggs and leave again for 1 minute
Flip the tortilla and leave to cook for 1 minute.
Take off the heat and drizzle with sauces and fold to make a sandwich
