Breakfast Tortilla


Those that favour a savoury breakfast will love this simple and quick recipe.


This recipe can be made in 15 minutes and leaves you full for a long time


Packed full of micronutrients and protein to kickstart your day in the right way.












INGREDIENTS

  • Mini Tortilla

  • 2 Eggs

  • 1/2 onion

  • Handful Kale

  • 1/4 Pepper

  • Optional sauces (sriracha, light mayo)



METHOD

  • Chop all your veggies and place them into a pan with oil to quick fry.

  • Crack 2 eggs into a bowl and and whisk them together.

  • Place eggs on top of the veggies in the pan and leave for 2-3 minutes

  • Place a tortilla on top of the eggs and leave again for 1 minute

  • Flip the tortilla and leave to cook for 1 minute.

  • Take off the heat and drizzle with sauces and fold to make a sandwich
