A modified recipe from holly b fitness on instagram. She uses lettuce and chorizo but I used kale and smoked turkey sausage to give it that little extra health boost whilst still tasting AMAZING!
I love any dressing that incorporates greek yogurt into the dressing as it just gives it that creamy texture and coats the meal in a way you feel like your getting a saucy dish whilst trying to reduce those calories (if thats your goal). It boosts the protein content and therefore is also a good alternative for those who are trying to be more vegetarian!
INGREDIENTS
serves 2
200g Prawns
100g Pasta
2 handfuls Kale
80g Sweetcorn
1 Pepper
1 onion
2 Smoked sausage (if you want chorizo then 30g)
Dressing
1 Avocado
100g Greek yogurt
1 Lime
Salt, pepper, paprika, chilli (to taste)
METHODS
Place the pasta in boiling water, cook until soft (20mins roughly). Whilst cooking onions in the pan.
Once the onions are cooked add the prawns and sausage to the pan.
Whilst things are cooking chop the veg and place into a bowl (minus the kale).
In the blender add all the ingredients for the dressing and blend until smooth.
Drain the pasta and let it cool. Then combine all the ingredients into one bowl and toss into the ingredients.
